Coach’s wife tries for salsa prize

GO BULLDOGS PEACH SALSA

Ingredients:
4 peaches, halved, pitted, and cut into 1/2-inch dice
1/2 small red onion, cut into 1/4-inch dice
4 green onions, including green tops, thinly sliced
2 medium tomatoes, cored, seeded, and cut into 1/2-inch dice
1 jalepeno chile, seeds and ribs removed, finely minced
1/2 cup chopped fresh cilantro leaves
1 lemon, juiced
1 lime, juiced
2 tablespoons pure olive oil
1 (1 ounce) package Hidden Valley Ranch Original Ranch salad dressing & seasoning mix

Directions:
In a medium bowl, combine the peaches, red onion, green onions, tomatoes, jalapenos, and cilantro. In a measuring cup, stir together the lemon juice, lime juice, oil and salad dressing mix. Stir until the seasoning mix dissolves, and then pour over the peach mixture. Stir gently to combine. Transfer to a serving bowl, cover, and set aside for 1 hour to allow flavors to meld.

Go Bulldogs Peach Salsa with Bulldogs Ranch Crisps did not take Melanie Felton very long to create, however the contest that followed has taken an entire month.

Felton, the wife of basketball coach Dennis Felton, came up with the original recipe when she was asked to be part of Hidden Valley Original Ranch’s Dunk & Dip contest. She is now in the finals against Juli Boeheim of Syracuse. Boeheim, the wife of Orangemen coach Jim Boeheim, made a dip called The Orange’s Cheese and Ranch Dip.

Voting will end on Thursday and the winner will be announced at a breakfast on Saturday. The award will be a $5,000 dollar donation in the winner’s name to the American Cancer Society and Coaches Versus Cancer.

Felton created a recipe she calls Go Bulldogs Peach Salsa with Bulldog Ranch Crisps.

“I’m a salsa kind of girl. I like sweet and salsa,” Felton said.

Felton said she agreed to the contest because it is a great cause and part of Coaches versus Cancer.

“I told Coaches versus Cancer that if anything came up to let me know, and when this came up I said sure,” Felton said.

Felton does not want to lose, especially to school that boasts the color orange.

“I need student votes. If every student would vote once I would win hands down,” Felton said. “Who likes to lose? And they (Syracuse) wear orange. Who wants to lose to someone who wears orange?”
