Bischero serves up Italian soup

Authentic Italian Wedding Soup
Ingredients
1 large onion, diced
2 ribs celery, diced
1 carrot, diced
thyme
olive oil
1 gallon chicken stock
2 handfuls escarole, chopped
Turkey Meatballs:
1 lb. ground turkey, 1 egg, parmesan cheese, parsley, salt and pepper
Egg Mixture:
2 eggs
Parmesan cheese
Parsley, julienned
Beat together
Saute onion, celery, and carrot in olive oil with thyme.
Add chicken stock. Make meatballs by combining ingredients and drop into soup. Bring to boil and add escarole. When meatballs are fully cooked, add beaten-egg mixture. Salt and pepper to taste.
